Tuna canelon with mediteranean favours (green olive juice, basil oil and olive pulp)
Kir Royal – (to clean the palate and introduce the next dish)

Slow cooked scallop with warm pak-choy salad with kimchi vinaigrette
Denton / Grouper, candied at 70’ with basil and pumpkin emulsion, accompany by aromatic mint salad
Orange sferification – (to clean the palate and introduce the next dish)
Royal beef tenderloin with potatoes and sweet potatoes nest filled in with crunchy quinoa seeds.
Tom Yum sorbet (with Kaffir lime, Citronelle, Galangal & coconut)
