Mediteranean oyster immerged into Japanese dashi stock, ginger & lime oil, with salmon roe and Wakame seaweed. Drink – Pisco Sour


First course (cold)

Candied mushrooms salad with caramelized lobster, germinated peas and passion fruit coulis

Bergamot ice cream (to clean the palate and introduce the next dish)


First course (warm)

Duck dumplings varnished with cantonese sauce with tamarind foam


Second course (fish)

Textures of codfish in shiitake juice, green apple and rhubarb

Gin tonic spherification


Second course (meat)

Veal terrine with pumpkin foam and catalan sweet potato chips


Desert

Passion fruit foam with Lyophilized mango
